Sindhi Kadhi Recipe | A Tangy Comfort Classic

Ingredients:

  • 3 tbsp gram flour (besan)
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 8 to 10 curry leaves
  • 2 dried red chilies
  • 1 small potato (cubed)
  • 1 small brinjal (eggplant), chopped
  • 1 drumstick (cut into pieces)
  • 1 small okra (bhindi), chopped
  • 1 small tomato (chopped)
  • 2 tbsp tamarind pulp
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • 4 to 5 cups water

Preparation Method:
Step 1: Roast the Besan
Heat oil in a deep pan and add gram flour. Roast on low flame, stirring continuously until it turns golden brown and releases a nutty aroma.

Step 2: Add Tempering
Add mustard seeds, cumin seeds, curry leaves, and dried red chilies. Let them splutter and release their flavors.

Step 3: Cook the Vegetables
Add potatoes, brinjal, drumsticks, and okra. Sauté for a few minutes. Then add chopped tomatoes, turmeric, red chili powder, and salt.

Step 4: Add Water and Tamarind
Pour in water and tamarind pulp. Mix well to avoid lumps. Bring the mixture to a boil.

Step 5: Simmer to Perfection
Lower the heat and let the kadhi simmer for 25 to 30 minutes, stirring occasionally until it thickens and the vegetables are fully cooked.

Sindhi Kadhi is best enjoyed hot with:
