  • Water (as needed to knead dough)

Preparation Method:
Step 1: Prepare the Dough
In a large bowl, combine whole wheat flour, chopped onions, green chilies, coriander leaves, cumin seeds, ajwain, turmeric, red chili powder, and salt. Add oil or ghee and mix well. Gradually add water and knead into a firm dough.

Step 2: Rest the Dough
Cover and let the dough rest for about 10 to 15 minutes. This helps enhance the flavor and texture.

Step 3: Shape the Koki
Divide the dough into equal portions. Roll each portion into a thick flatbread. Traditionally, small indentations are made using fingers or a fork to ensure even cooking.

Step 4: Cook the Koki
Heat a tawa (griddle) on medium flame. Place the koki on the hot tawa and cook slowly. Apply ghee or oil on both sides and cook until golden brown and crispy.
