  • 2 cups spinach (palak), chopped
  • ½ cup chana dal (split Bengal gram)

  • 2 green chilies (slit)
  • 3 to 4 cloves garlic (chopped)
  • ½ tsp turmeric powder
  • 1 tsp cumin seeds
  • Salt to taste
  • 2 tbsp oil or ghee
  • 3 to 4 cups water

Preparation Method:
Step 1: Prep the Ingredients
Wash the spinach thoroughly and chop it. Rinse the chana dal and soak it for 15–20 minutes for quicker cooking.

Step 2: Cook the Base
In a pressure cooker or deep pot, add spinach, chana dal, potato, brinjal, tomato, onion (if using), green chilies, turmeric, salt, and water. Cook until the dal and vegetables are soft (3 to 4 whistles in a pressure cooker).

Step 3: Mash the Mixture
Once cooked, mash the mixture lightly using a hand masher to achieve a semi-smooth consistency. This gives Sai Bhaji its signature texture.

Step 4: Prepare the Tempering (Tadka)
In a small pan, heat oil or ghee. Add cumin seeds and chopped garlic, sauté until golden and aromatic.

Step 5: Combine and Simmer
Pour the tempering over the cooked bhaji and mix well. Let it simmer for a few minutes to enhance the flavors.

Serving Suggestions:
Sai Bhaji is best served hot with:

  • Steamed rice
  • Phulka or chapati
  • A side of pickle and sliced onions
  • A dollop of ghee on top adds extra richness and flavor
